Pasta can be very simple to make and doesn’t take too much time, so it’s always at the top of my list when I’m craving comfort food (or if I’m really hungry and can’t think of other yummy/quick things to make). However, too many starches and canned sauces can be a little deterring to my mid-section so I use this recipe for vegan Homemade Pesto Pasta. It always makes me feel a little better about what I am putting into my body but still has that home-cooked feel that I crave.
Here’s what you’ll need:
Pesto:
– A Handful of Fresh Basil
– 2/3 cups of Pine Nuts
– 2 cloves of Garlic
– 2 Lemons
– Salt
Pasta:
– 1 Box of Brown Rice Pasta
– A Handful of Spinach
– 1 small bag of Peas
Put the pine nuts, basil, garlic, olive oil and lemons (they add a touch of zest and freshness to the sauce) into the food processor and mix until creamy and set to the side. Heat the water until its boiling and add the pasta. Once it is looking close to being at the texture you like, add the peas. When cooked, drain the pasta and peas and put them back into the saucepan. Add the pesto sauce and spinach and cook in low heat to allow the sauce and other ingredients to mix. You’re now ready to enjoy your vegan homemade pesto pasta!
