I recently read an article about a New Years Resolution in July and how it is never too late to start working towards your goals again. My personal goal for the year was to be healthier and watch what goes into my body because in the end it is my temple and what I put in will also be reflected on the outside. I started slowly weaning off sweets and processed foods and moved into giving up meat and becoming a pescatarian – growing up in El Salvador and living in South Florida, I couldn’t fathom giving up seafood , but the rest seemed okay by me. While I’ve been pretty good about keeping my resolution going all year long, there were times where I just had those cravings for sweets and didn’t know what to do. That i is until I found this amazing recipe! So, I thought it would be great to share one of my favourite treats.. Brazil Nut Energy Truffles. The best thing about them is that they gave loads of amazing things inside, they will give you energy and keep the cravings away.
It all started when I tried the Brazil nut crumbles from JugoFresh – a local eatery in Miami specializing in pressed juices and vegan food. They were sweet and soft yet crunchy and just all around perfection. But paying such a high price for a tiny box didn’t allow me to enjoy these treats as much as I would’ve wished so I decided to try the recipe on my own. It took a couple tries and the more I make these energy truffles, the better they come out. Either way, they are now a staple piece in my fridge so I can enjoy them as I wish!
Here is what you’ll need:
– 1 1/2 cups Brazil nuts (you can also use any other type of nut, these are just my favourites)
– 1 cup Medjool Dates
– 2 tablespoons of Cacao Powder (I buy the mix from TerrAmazon which comes with both the Cacao and Maca)
– 2 tablespoons of Maca Powder
– 2 tablespoons of Chia Seeds
– Raw Honey
– 1 teaspoon Grey Sea Salt
– Coconut shavings (optional)
– Hemp Powder (optional)
Simple right?
Now all you have to do it make sure your dates are pitted and put all the ingredients into your food processor.(I personally don’t own one so I use my Magic Bullet. It takes longer but works just as well). You can add as much of each ingredient as you wish to personalize it for your likes, these are just the measurements what have worked best for me. Once all the items are mixed together grab a small lump of the mix and roll into a small ball. Do this with the rest of the mix and let it cool in the fridge for a while.
After this you are ready to enjoy your Brazil Nut Energy Truffles!
